Roasted Peppers and Onions with Apples

1 green pepper cut in wedges
1 large apple cut in wedges
1 medium onion sliced in rings about 1/4 inch thick
1/2 cup Italian salad dressing
Seasoned salt and pepper to taste

Combine all ingredients in a sealable plastic bag.  Marinate 1 hour in refrigerator, turning often.  Remove from bag, drain but retain marinade.  Roast over hot greased grill about 15 minutes, brushing with remaining marinade.  Serve with crusty Italian bread and a small salad.

 

Barbecued Marinated Chicken

6 boneless, skinless, chicken breasts, halved, about 1-1/2 #
1/2 cup vinegar
1/4 cup cooking oil
3/4 teaspoon poultry seasoning
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper

The day before the meal, place chicken in heavy plastic food storage bag. With wire whisk, mix remaining ingredients until smooth. Pour over chicken. Tie bag securely. Refrigerate several hours or overnight. Drain and reserve marinade. Over hot coals, grill chicken, turning and basting with marinade until chicken is thoroughly cooked. Makes 6 servings.

 Crock Pot Special

If you want to come back to your camping rig with dinner ready after sightseeing, try this delectable recipe.

3 lb. pot roast
10 oz. can of Campbell's Cheddar Cheese soup
10 oz. can of Campbell's Golden Mushroom soup
10 oz. can of Campbell's French Onion soup
Cooked egg noodles or potatoes

Mix Cheddar Cheese soup, French Onion soup, and Golden Mushroom soup in a crock pot.  Do not add water.  Place pot roast in crock pot.  Cook on low for 8 to 9 hours.  Turn roast halfway through cooking.  Serve over egg noodles or rice.  Juice from the roast will thin out the soup.  Serves 4 people.
 

Rhubarb Bread

3 eggs 2 c. all-purpose flour
2 c. salad oil 2 tsp. baking soda
1-3/4 c. packed brown sugar 2 tsp. cinnamon
2 tsp. vanilla extract 1 tsp. salt
2-1/2 c. finely diced rhubarb 1/2 tsp. nutmeg
1/2 c. chopped walnuts (optional) 1/2 tsp. allspice
In a large mixing bowl, combine eggs, oil, sugar and vanilla.  Beat until thick and foamy.  Stir in (with spoon) rhubarb and nuts.
In a separate bowl, combine all remaining ingredients; stir to mix well.  Add these dry ingredients to rhubarb mixture.  Stir until just blended.
Divide batter into two 9 x 5 x 3-inch loaf pans.  Bake in a 350 degree oven until wooden pick comes out clean, about 1 hour.  Cool in pans for 10 minutes, then turn out on a wire rack to finish cooling.

 

Apple Blueberry Cobbler
Makes 6 servings

Ingredients:

4 large apples, peeled, cored and thinly sliced
¾ cup fresh or frozen blueberries
1 4-serving-size butterscotch pudding mix
2 tablespoons reduced fat margarine, melted
1 package instant oatmeal, cinnamon/spice flavor
6 tablespoons low-fat fruit-flavored yogurt

Directions:

1.       Place apples and blueberries in oven-safe one-quart casserole dish.  Sprinkle with 2 tablespoons of dry pudding mix.  Set aside.

2.       Combine margarine and oatmeal mix, stirring with fork until mixture is crumbly.  Distribute evenly over fruit mixture.

3.       Bake at 350 degrees for about 20 minutes until hot and bubbly.  Let stand for 15 minutes before serving.  Top each serving with 1 tablespoon yogurt.

 

Grandma’s Oatmeal Cookies

 2 cups butter or margarine, softened
1-1/2 cups packed brown sugar
½ cup sugar
4 eggs
7 cups quick-cooking oats
2-1/2 cups all-purpose flour
1 package (5.1 ounces) instant vanilla pudding mix
2 teaspoons baking soda 

In a mixing bowl, cream butter and sugars.  Add eggs, one at a time, beating well after each addition.  Combine the oats, flour, dry pudding mix and baking soda; gradually add to the creamed mixture. 

Drop by heaping tablespoonfuls 2 inches apart onto lightly greased baking sheets.  Bake at 375 degrees for 12-14 minutes or until golden brown.  Remove to wire racks to cool.  Yield:  7 dozen.
 

Pesce Alla Procidana

8 tbsp. olive oil
1/8 cup red wine vinegar
1/2 cup white wine
2 cloves finely chopped garlic
1 tsp. basil
1 tsp. oregano
4 8-ounce portions of fish

Combine all ingredients and pour over fish.  Broil for about 10 minutes until the fish is done.  Garnish with grilled tomato, lemon or mint.
 

Peanut Butter Cookies

1 egg
1 cup peanut butter
1 cup white sugar

Mix all ingredients.  Drop by teaspoon on cookie sheets.  Bake at 350 degrees for 8 to 10 minutes.
 

Guinness Beer Bread

4 cups flour
2 tbsp. baking powder
1 tsp. salt
1/4 cup sugar
12 oz. Guinness draught beer
2 eggs, slightly beaten

Preheat oven to 375 degrees F.  Sift together flour, powder, salt and sugar.  Add Guinness and eggs, and stir until batter is just blended.  Pour in greased 9 x 5 x 3 inch loaf pan and bake for around 70 minutes.  Remove from pan and let cool.

In moderation, recent research shows that beer can actually decrease the risk of cardio vascular disease, especially in middle-aged men and women.  Beer raises levels of HDL, the good cholesterol that protects against heart disease.  A Dutch study published last year (2000) found that beer helps control blood levels of homocysteine, a substance that seems to contribute to heart disease.  That may be because beer is a good source of B vitamins, which suppress homocysteine.
